Pork Loin Leftover Makeover Part 1

We had at least 1/2 of the pork loin left over, as well as some rice, beans, and pico. So, tonight I made Pork Soft Tacos. Tom was content with just straight up leftovers-- no creative meals for him.

I sliced the pork loin, and warmed it up in the oven.  I reheated the rice and beans, and warmed some flour tortillas in the oven.

My tacos consisted of sliced pork, cheese, pico de gallo, lettuce, and a bit of low cal Ranch. 
I had rice and beans on the side.
